For Christmas Omar got me this thing called an Instant Pot. I have to say, I was pretty skeptical of how much mileage it would get in my kitchen. I've always thought of pressure cookers as tools for tenderizing cheap cuts of meat...and I don't eat meat anymore...and when I do make meat for Omar or a guest, it's never cheap. But I humored him and played with the thing. Well, what can I say? Now it's one of the most frequently used tools in my kitchen. Who knew that in just a mere 40 minutes you could cook black beans from dry and unsoaked to perfecty done?! It sounds crazy, but I swear it's true! I've done it more than once now with consistent results. Seriously. No over night soaking. Dry out of the pantry, black beans, perfectly done. It's also makes amazing rice and soup. A pot of soup that used to need tended and simmered slowly all day is done in half an hour! No shit. Made a pot of Italian-style white bean soup yesterday. It was awesome and will be even better for dinner tonight. Everyone knows soup is better the second day. You know what else is better the second day?
